Pressure canning is the only safe method for preserving low-acid foods at home — vegetables, meat, poultry, seafood, soups, and beans. A pressure canner reaches 116°C, well above the temperature required to destroy Clostridium botulinum. If you’re serious about home food preservation, this is the piece of equipment that makes everything else possible.

The Presto 23-Quart model we carry has been exclusively configured for Ball Mason Australia: induction-compatible stainless steel base, upgraded 3-piece regulator (allowing hands-free processing at 5, 10, and 15 psi), dial pressure gauge, gasket, and rack — all included. This is not a grey-market import. It is a purpose-built unit for Australian kitchens, with full parts support from our warehouse in Kempsey, NSW.
Pressure canner vs pressure cooker — not the same thing
A standard pressure cooker cannot safely can low-acid foods. Pressure canners are larger, have a dial gauge for accurate monitoring, and are tested to USDA standards. The Presto 23-Quart handles 7 x 1-litre jars per batch — purpose-built for preserving, not cooking. Replacement parts, gauges, and gaskets are in our Canner Accessories collection.
