Pressure canning is the only safe method for preserving low-acid foods at home — meat, poultry, seafood, beans, and most vegetables. Unlike water bath canning, a pressure canner reaches 116°C, the temperature required to destroy Clostridium botulinum and its spores. If you’re serious about home food preservation, a pressure canner is the most important piece of equipment you’ll own.
